That chicken looks so good :)

My work has been interfering with my oppurtunities to cook. Well enough of that. I cleaned the kitchen and got started right away on wrecking it. Tonight is an ice berg lettuce wedge salad, edamame, and Rao's Lemon chicken.


The salad is super easy. Just be sure to use the best ingredients. I went with rendered pancetta, cherry tomatoes, cucumber, stilton blue cheese, and croutons made from fresh baguette.

The salad is super easy. Just be sure to use the best ingredients. I went with rendered pancetta, cherry tomatoes, cucumber, stilton blue cheese, and croutons made from fresh baguette.



Put all these on top of the iceberg lettuce and drizzle with some blue cheese dressing.



Now for the Lemon marinade. I used the juice of 3 lemons. This was about 3/4 cup. I then mixed in olive oil to the ratio of 2 parts lemon juice to 1 part olive oil. Then some chopped garlic, fresh oregano, salt, and pepper.


Now take half of your lemon sauce and pour over the chicken pieces. Toss to coat and then put under a hot broiler. Use a broiling pan that has sides to hold the juices and sauce. Watch closely and broil these pieces while turning every few minutes until done. It took me about another 10 minutes on high.


While your chicken is cooking, bring the other half of the sauce to a simmer. Let it concentrate until your chicken is done. Take the sauce off the heat and whisk in a couple Tbsp of chilled butter.
